Dieser Palo Cortado seco, oder trocken - reifte über Jahre im Eichenfässern, welche nach dem Solera-Verfahren über Jahre hinweg pyramidenförmig mit Weinen aus früheren Jahrgängen assembliert werden. Der Reifungsprozess erfolgt ähnlich eines Olorosos und ist auch geschmacklich zwischen einem Oloroso und einem Amontillado einzugliedern.
Es erfolgte mindest eine 15-jährige Fassreifung. Hiervon werden jährlich nur gerade 2000 Flaschen produziert. Appearance: Attractive colour of antique gold.
Nose: The aromatic complexity reveals toasted almonds, walnuts and raisins.
Palate: On the palate it is pleasant, rounded and harmonious. Deliciously smooth and lingering.
Food pairing: Traditional: Fresh tomato dishes / Innovative: Chicken teriyaki.

Points of interest The Palo Cortado sherries are particularly special within the Jerez-Xèrés-Sherry Designation of Origin. This is because despite the fact that production follows the similar physical-chemical process of oxidative ageing as with the olorosos, the result is quite different with their organoleptic characteristics falling somewhere between those of an amontillado and an oloroso. The NV Palo Cortado Obispo Gascon, produced from Palomino grapes averaging 20 years old, and shows the telltale nose of Palo Cortado with its lactic touch and an off-dry nose of apricots, blond tobacco and spices. The palate is dominated by the salty notes (common to all Barbadillo wines), sharp, medium-bodied, with great length.

In erster Linie ist das alteingesessene Haus‚der Inbegriff‘ für einer der besten Sherry-Produzenten weltweit. Don Benigno Barbadillo und Don Manuel Lopez Barbadillo liessen sich 1821 in Sanlucar de Barrameda nieder und widmeten sich dem Weinbau. Die renommierte Bodega besitzt seit Jahrzehnten auch Parzellen nahe der geschichtsträchtigen Stadt Cadiz. Die im südlichen Andalusien gelegene Hafenstadt gilt als die erste bewohnte Siedlung auf dem europäischen Kontinent.
Auf den Bodega eigenen Parzellen werden Traubensorten wie Merlot, Syrah, Tempranillo und die autochthone Traubensorte ‘Tintilla de Rota’ angebaut. Die letztere Traubensorte ist für ihren undurchdringlich dunklen Traubensaft und der fruchtbetonten Aromatik bekannt.
